Meet Chef Shaun Schuette
Experience a world of flavor under the guidance of Chef Shaun Schuette at Tony Gwynn’s Sports Pub. Born and raised in San Diego, Shaun’s passion for cooking began in the high-school culinary program at Mission Hills—where he graduated with honors as part of its inaugural class—and evolved through every station in the kitchen, from washing dishes to leading a brigade.
Shaun honed his craft at some of the most demanding tables and venues: fine-dining at Joël Robuchon’s Mansion in Las Vegas and Paris; launching Topgolf’s flagship MGM Grand location as Executive Sous Chef; and stints at Tommy Bahama and Waverly in Cardiff. He’s also cooked abroad in France and Denmark, immersing himself in local culinary traditions that continue to influence his dishes today. Committed to mentorship, Shaun believes knowledge only lives on when shared—so every dish is both a lesson and a celebration of the people and ingredients behind it.
